Crispy Fried Crab Cutlets
Ingredients
- 2 crabs
- salt
- pepper
- pinch of mustard
- 1 tbsp Worcestershire sauce
- 1.5 oz butter (size of an egg)
- 2 tbsp flour
- 1 cup rich cream
- egg
- bread crumbs
- crab claws
- parsley
- lime slices
Method
- 1 Remove meat from 2 crabs. Season with salt, pepper, a pinch of mustard, and 1 tbsp Worcestershire sauce.
- 2 Melt 1.5 oz butter in a saucepan. Stir in 2 tbsp flour, then add 1 cup rich cream, stirring constantly.
- 3 Mix in the prepared crab meat. Set aside to cool completely.
- 4 Mold the mixture into cutlets. Roll each in egg and bread crumbs. Stick saved claws into the cutlets.
- 5 Fry the cutlets until golden brown. Serve with parsley and lime slices.
