Crispy Breaded Smelts On Skewers

Ingredients

  • medium smelts, cleaned and dried
  • salt and pepper
  • egg, beaten
  • breadcrumbs
  • oil for frying
  • Mayonnaise, Tartare sauce, or lemon wedges for serving

Method

  1. 1 Clean smelts carefully and wipe them dry. Season with salt and pepper.
  2. 2 Dip each smelt in beaten egg, then roll in breadcrumbs to coat.
  3. 3 Thread three or four smelts onto each skewer, passing through the eyes.
  4. 4 Fry in very hot oil in batches until golden and crispy.
  5. 5 Serve immediately on a napkin with Mayonnaise, Tartare sauce, or lemon wedges.
