Crispy Breaded Smelts On Skewers
Ingredients
- medium smelts, cleaned and dried
- salt and pepper
- egg, beaten
- breadcrumbs
- oil for frying
- Mayonnaise, Tartare sauce, or lemon wedges for serving
Method
- 1 Clean smelts carefully and wipe them dry. Season with salt and pepper.
- 2 Dip each smelt in beaten egg, then roll in breadcrumbs to coat.
- 3 Thread three or four smelts onto each skewer, passing through the eyes.
- 4 Fry in very hot oil in batches until golden and crispy.
- 5 Serve immediately on a napkin with Mayonnaise, Tartare sauce, or lemon wedges.
