Crispy Breaded Fried Sole

Ingredients

  • 1 sole
  • 1 egg
  • bread crumbs
  • fresh parsley
  • flour
  • hot fat for frying

Method

  1. 1 Remove the dark skin from the sole and notch the other side with a knife. Dry the fish thoroughly in a floured cloth.
  2. 2 Brush the sole with beaten egg and coat evenly with bread crumbs. Press the crumbs firmly onto the fish using a broad-bladed knife.
  3. 3 Heat enough fat in a deep frying pan to cover the sole. Fry the fish until golden brown, avoiding turning if possible.
  4. 4 Drain the cooked sole on kitchen paper. Serve on a napkin and garnish with fried parsley.
