Crispy Breaded Fried Sole
Ingredients
- 1 sole
- 1 egg
- bread crumbs
- fresh parsley
- flour
- hot fat for frying
Method
- 1 Remove the dark skin from the sole and notch the other side with a knife. Dry the fish thoroughly in a floured cloth.
- 2 Brush the sole with beaten egg and coat evenly with bread crumbs. Press the crumbs firmly onto the fish using a broad-bladed knife.
- 3 Heat enough fat in a deep frying pan to cover the sole. Fry the fish until golden brown, avoiding turning if possible.
- 4 Drain the cooked sole on kitchen paper. Serve on a napkin and garnish with fried parsley.
