Crispy Breadcrumb Fried Cod Cutlets
Ingredients
- 1 ½ lbs cod tail fillets
- 1 egg, beaten
- 1 cup breadcrumbs
- 1 tbsp flour
- Salt and pepper to taste
- Oil or fat for frying
Method
- 1 Divide the cod flesh from the bone and cut into neat, even pieces. Flatten each piece slightly with a knife.
- 2 Mix breadcrumbs with flour, salt, and pepper in a shallow dish.
- 3 Dip each cod piece in the beaten egg, then coat thoroughly in the breadcrumb mixture.
- 4 Fry in plenty of hot fat in a wire basket or frying pan until crisp and golden brown. Serve immediately.
