Crispy Breadcrumb Fried Cod Cutlets

Ingredients

  • 1 ½ lbs cod tail fillets
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 1 tbsp flour
  • Salt and pepper to taste
  • Oil or fat for frying

Method

  1. 1 Divide the cod flesh from the bone and cut into neat, even pieces. Flatten each piece slightly with a knife.
  2. 2 Mix breadcrumbs with flour, salt, and pepper in a shallow dish.
  3. 3 Dip each cod piece in the beaten egg, then coat thoroughly in the breadcrumb mixture.
  4. 4 Fry in plenty of hot fat in a wire basket or frying pan until crisp and golden brown. Serve immediately.
