Crisp Bitter Almond Macaroons On Wafer Paper
Ingredients
- 1 packet egg whites (albumen)
- 3 tsp cold water
- ½ lb finely sifted sugar
- 2 oz sweet almonds, pounded
- 2 oz bitter almonds, pounded
- Flour for dusting baking sheet
- Wafer paper sheets
Method
- 1 Beat egg whites and cold water to a strong froth.
- 2 Mix in sifted sugar and pounded sweet and bitter almonds.
- 3 Flour a baking sheet, place wafer paper on top, and drop small pieces of paste at equal distances.
- 4 Bake in a moderate oven (350°F) for 10 minutes or until crisp and golden.
- 5 Cut around the wafer paper with a knife and place cakes on a sieve to dry.
