Crisp Bitter Almond Macaroons On Wafer Paper

Ingredients

  • 1 packet egg whites (albumen)
  • 3 tsp cold water
  • ½ lb finely sifted sugar
  • 2 oz sweet almonds, pounded
  • 2 oz bitter almonds, pounded
  • Flour for dusting baking sheet
  • Wafer paper sheets

Method

  1. 1 Beat egg whites and cold water to a strong froth.
  2. 2 Mix in sifted sugar and pounded sweet and bitter almonds.
  3. 3 Flour a baking sheet, place wafer paper on top, and drop small pieces of paste at equal distances.
  4. 4 Bake in a moderate oven (350°F) for 10 minutes or until crisp and golden.
  5. 5 Cut around the wafer paper with a knife and place cakes on a sieve to dry.
