Crisco Creamed Cornmeal Muffins
Ingredients
- 1 cup flour
- 2 tablespoons Crisco
- 1 cup yellow cornmeal
- 3 tablespoons sugar
- 1 cup milk
- 2 eggs
- 1 teaspoon salt
- 3 teaspoons baking powder
Method
- 1 Cream Crisco and sugar together, then add beaten eggs and milk.
- 2 Sift flour, cornmeal, salt, and baking powder together three times.
- 3 Slowly stir the dry ingredients into the wet mixture.
- 4 Divide batter into greased gem pans.
- 5 Bake in a moderately hot oven (425°F) for 25 minutes.
