Creole Tomato Rice
Ingredients
- 2 tablespoons savory drippings
- 3 tablespoons flour
- 1 teaspoon salt
- 0.25 teaspoon cayenne
- 1.25 cups tomato juice and pulp
- 1 teaspoon onion juice
- 2 tablespoons chopped green pepper
- 1 tablespoon chopped olives
- 1 cup rice
- 1 cup water
Method
- 1 Wash rice and soak in water for 30 minutes.
- 2 Melt fat in a pot, add flour, salt, and cayenne.
- 3 Gradually stir in tomato juice and pulp.
- 4 Add rice, onion juice, green pepper, olives, and the water used to soak the rice.
- 5 Cook slowly for 30 minutes or until rice is tender.
