Creole Oyster Gumbo
Ingredients
- 1 Spanish onion, sliced
- Olive oil
- 1 tbsp flour
- 1 sweet pepper, chopped
- 1 pint okra
- 100 oysters, with liquor
- 1 tbsp filé powder
- Boiled rice, for serving
Method
- 1 Fry sliced Spanish onion in olive oil until brown.
- 2 Stir in flour, chopped sweet pepper, and okra. Simmer for 15 minutes.
- 3 Add oysters with their liquor and filé powder. Cook until oysters ruffle.
- 4 Serve hot over boiled rice.
