Creole Oyster Gumbo

Ingredients

  • 1 Spanish onion, sliced
  • Olive oil
  • 1 tbsp flour
  • 1 sweet pepper, chopped
  • 1 pint okra
  • 100 oysters, with liquor
  • 1 tbsp filé powder
  • Boiled rice, for serving

Method

  1. 1 Fry sliced Spanish onion in olive oil until brown.
  2. 2 Stir in flour, chopped sweet pepper, and okra. Simmer for 15 minutes.
  3. 3 Add oysters with their liquor and filé powder. Cook until oysters ruffle.
  4. 4 Serve hot over boiled rice.
