Creamy White Wine Pike
Ingredients
- 1 pike, cleaned and cut into pieces
- 1 tbsp butter
- 1 bunch mixed sweet herbs
- 4 oz mushrooms, sliced
- 1 tbsp flour
- 1 cup broth
- 1 pint white wine
- Salt and cayenne pepper to taste
- 3 egg yolks
- 1/2 pint heavy cream
Method
- 1 Place pike pieces in a stewpan with butter, sweet herbs, and mushrooms. Sauté over a brisk fire, turning occasionally.
- 2 Sprinkle flour over the fish and stir. Add broth and white wine, then simmer until the fish is cooked through.
- 3 Season with salt and cayenne. Remove from heat and temper the egg yolks with a little sauce, then stir in the cream and yolks until mixed.
- 4 Serve immediately while hot.
