Creamy White Wine Pike

Ingredients

  • 1 pike, cleaned and cut into pieces
  • 1 tbsp butter
  • 1 bunch mixed sweet herbs
  • 4 oz mushrooms, sliced
  • 1 tbsp flour
  • 1 cup broth
  • 1 pint white wine
  • Salt and cayenne pepper to taste
  • 3 egg yolks
  • 1/2 pint heavy cream

Method

  1. 1 Place pike pieces in a stewpan with butter, sweet herbs, and mushrooms. Sauté over a brisk fire, turning occasionally.
  2. 2 Sprinkle flour over the fish and stir. Add broth and white wine, then simmer until the fish is cooked through.
  3. 3 Season with salt and cayenne. Remove from heat and temper the egg yolks with a little sauce, then stir in the cream and yolks until mixed.
  4. 4 Serve immediately while hot.
