Creamy White Wine Oyster Sauce

Ingredients

  • 1 dozen oysters
  • 1 tbsp flour
  • 1 tbsp butter
  • A pinch of mace
  • Whole peppercorns
  • Salt to taste
  • 1/4 cup white wine

Method

  1. 1 Plump oysters in their liquor over heat for a few minutes, then remove them.
  2. 2 Stir flour and butter into the hot liquor along with mace, whole pepper, and salt.
  3. 3 Boil until thickened, return oysters to the sauce, and add white wine before serving.
