Creamy Vinegar Green Bean Salad

Ingredients

  • 1/2 pound green string beans
  • 1/2 small onion
  • 1/2 cup vinegar
  • 1/2 cup sweet or sour cream
  • 2 tablespoons sugar
  • 1/2 tablespoon salt
  • 1/8 teaspoon pepper or paprika

Method

  1. 1 Boil the beans in salt water until tender but not soft.
  2. 2 Drain the beans and let them cool completely.
  3. 3 Finely chop the onion and add it to the cooled beans.
  4. 4 Mix the cream, vinegar, salt, sugar, and pepper together.
  5. 5 Pour the dressing over the beans and toss to combine.
  6. 6 Serve very cold on lettuce leaves, optionally garnished with hard-boiled eggs.
