Creamy Vinegar Green Bean Salad
Ingredients
- 1/2 pound green string beans
- 1/2 small onion
- 1/2 cup vinegar
- 1/2 cup sweet or sour cream
- 2 tablespoons sugar
- 1/2 tablespoon salt
- 1/8 teaspoon pepper or paprika
Method
- 1 Boil the beans in salt water until tender but not soft.
- 2 Drain the beans and let them cool completely.
- 3 Finely chop the onion and add it to the cooled beans.
- 4 Mix the cream, vinegar, salt, sugar, and pepper together.
- 5 Pour the dressing over the beans and toss to combine.
- 6 Serve very cold on lettuce leaves, optionally garnished with hard-boiled eggs.
