Creamy Vegetable Purée Soup With Croutons
Ingredients
- 3 onions, finely chopped
- 1 turnip, chopped
- 2 carrots, chopped
- 4 potatoes, chopped
- 4 tablespoons butter
- 1 tablespoon flour
- 2 quarts boiling milk
- Salt and pepper to taste
- 1 pinch sugar
- Fresh parsley
- Fried bread croutons for serving
Method
- 1 Chop onions, turnip, carrots, and potatoes finely. Melt butter in a saucepan over medium heat.
- 2 Add vegetables and parsley to the butter. Cook for 10 minutes, stirring occasionally.
- 3 Stir in flour until coated. Gradually add boiling milk, stirring constantly to prevent lumps.
- 4 Season with salt, pepper, and a pinch of sugar. Bring to a boil, then remove from heat.
- 5 Remove parsley. Press the soup through a fine sieve into a clean pot. Serve hot with fried bread croutons.
