Creamy Vegetable Purée Soup With Croutons

Ingredients

  • 3 onions, finely chopped
  • 1 turnip, chopped
  • 2 carrots, chopped
  • 4 potatoes, chopped
  • 4 tablespoons butter
  • 1 tablespoon flour
  • 2 quarts boiling milk
  • Salt and pepper to taste
  • 1 pinch sugar
  • Fresh parsley
  • Fried bread croutons for serving

Method

  1. 1 Chop onions, turnip, carrots, and potatoes finely. Melt butter in a saucepan over medium heat.
  2. 2 Add vegetables and parsley to the butter. Cook for 10 minutes, stirring occasionally.
  3. 3 Stir in flour until coated. Gradually add boiling milk, stirring constantly to prevent lumps.
  4. 4 Season with salt, pepper, and a pinch of sugar. Bring to a boil, then remove from heat.
  5. 5 Remove parsley. Press the soup through a fine sieve into a clean pot. Serve hot with fried bread croutons.
