Creamy Veal With Egg Yolk Sauce

Ingredients

  • 1 loin of veal, roasted and sliced
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tsp chopped parsley
  • 1 tsp chopped chives
  • Salt and pepper to taste
  • ½ cup broth
  • 3-4 egg yolks, beaten

Method

  1. 1 Melt butter in a saucepan with flour, parsley, and chives. Stir for one minute.
  2. 2 Add sliced veal, salt, and pepper. Pour in broth and simmer for a few minutes.
  3. 3 Stir in beaten egg yolks and parsley. Cook, stirring constantly, until thickened.
