Creamy Veal With Egg Yolk Sauce
Ingredients
- 1 loin of veal, roasted and sliced
- 2 tbsp butter
- 1 tbsp flour
- 1 tsp chopped parsley
- 1 tsp chopped chives
- Salt and pepper to taste
- ½ cup broth
- 3-4 egg yolks, beaten
Method
- 1 Melt butter in a saucepan with flour, parsley, and chives. Stir for one minute.
- 2 Add sliced veal, salt, and pepper. Pour in broth and simmer for a few minutes.
- 3 Stir in beaten egg yolks and parsley. Cook, stirring constantly, until thickened.
