Creamy Veal Fricassee With Mushrooms And Morels

- 1 breast of veal
- butter
- parsley
- scallions
- mushrooms
- truffles
- morels
- flour
- stock broth
- 3 egg yolks
- milk
- lemon juice
Method
- 1 Parboil the veal breast.
- 2 Turn the veal over the fire with butter, parsley, scallions, mushrooms, truffles, and morels.
- 3 Shake in a little flour and moisten with good stock broth. Cook until done and skim.
- 4 Thicken with egg yolks beaten with milk. Add a little lemon juice before serving.
