Creamy Veal And Onion Soup
Ingredients
- 3 lbs veal
- handful sweet herbs
- little mace
- 25 onions
- 1 pint cream
- salt to taste
- cayenne pepper to taste
Method
- 1 Boil veal with sweet herbs and mace until tender. Strain through a sieve and skim off all fat.
- 2 Peel onions and boil until soft. Rub them through a sieve to create a smooth puree.
- 3 Mix onion puree with the veal gravy. Season with salt and cayenne pepper to taste.
- 4 Bring the mixture to a boil, then remove from heat. Stir in the cream just before serving.
