Creamy Veal And Onion Soup

Ingredients

  • 3 lbs veal
  • handful sweet herbs
  • little mace
  • 25 onions
  • 1 pint cream
  • salt to taste
  • cayenne pepper to taste

Method

  1. 1 Boil veal with sweet herbs and mace until tender. Strain through a sieve and skim off all fat.
  2. 2 Peel onions and boil until soft. Rub them through a sieve to create a smooth puree.
  3. 3 Mix onion puree with the veal gravy. Season with salt and cayenne pepper to taste.
  4. 4 Bring the mixture to a boil, then remove from heat. Stir in the cream just before serving.
