Creamy Veal And Ham Soup
Ingredients
- 3 quarts water
- 3 onions, chopped
- 1 tsp black pepper, ground
- 2 tsp salt
- 2-3 slices lean ham
- 1 veal shin
- 1/4 cup heavy cream
- 2 tbsp all-purpose flour
- 2 egg yolks
- 1 tbsp fresh parsley, chopped
- 12 ripe tomatoes, peeled (optional)
Method
- 1 In a large pot, combine water, onions, pepper, salt, and ham. Boil steadily for 2 hours, skimming occasionally.
- 2 Add the veal shin and boil for 2 more hours. Remove ham slices and skim off excess grease.
- 3 Whisk cream, flour, and egg yolks together. Strain the mixture and stir in chopped parsley.
- 4 Ladle a small amount of hot soup into the cream mixture to temper it, then pour it back into the pot. Stir constantly and boil for 2-3 minutes.
- 5 Optional: Add peeled tomatoes during the initial boiling phase and thicken with flour only. Serve hot.
