Creamy Veal And Ham Soup

Ingredients

  • 3 quarts water
  • 3 onions, chopped
  • 1 tsp black pepper, ground
  • 2 tsp salt
  • 2-3 slices lean ham
  • 1 veal shin
  • 1/4 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 egg yolks
  • 1 tbsp fresh parsley, chopped
  • 12 ripe tomatoes, peeled (optional)

Method

  1. 1 In a large pot, combine water, onions, pepper, salt, and ham. Boil steadily for 2 hours, skimming occasionally.
  2. 2 Add the veal shin and boil for 2 more hours. Remove ham slices and skim off excess grease.
  3. 3 Whisk cream, flour, and egg yolks together. Strain the mixture and stir in chopped parsley.
  4. 4 Ladle a small amount of hot soup into the cream mixture to temper it, then pour it back into the pot. Stir constantly and boil for 2-3 minutes.
  5. 5 Optional: Add peeled tomatoes during the initial boiling phase and thicken with flour only. Serve hot.
