Creamy Vanilla Butter Caramels

Ingredients

  • 6 lbs sugar
  • 2 quarts sweet cream
  • 15 lbs fresh butter
  • 4 lbs glucose
  • Essence of vanilla

Method

  1. 1 Combine sugar, glucose, and cream in a pan over slow fire. Stir constantly and boil until the mixture forms a stiff ball.
  2. 2 Add the butter and continue stirring until the mixture has boiled through thoroughly.
  3. 3 Remove from heat and stir in vanilla extract. Pour the mixture onto an oiled plate.
  4. 4 Allow to set, then mark into pieces using a caramel cutter. Once cold, divide with a sharp knife and wrap each caramel in wax paper.
