Creamy Vanilla Butter Caramels
Ingredients
- 6 lbs sugar
- 2 quarts sweet cream
- 15 lbs fresh butter
- 4 lbs glucose
- Essence of vanilla
Method
- 1 Combine sugar, glucose, and cream in a pan over slow fire. Stir constantly and boil until the mixture forms a stiff ball.
- 2 Add the butter and continue stirring until the mixture has boiled through thoroughly.
- 3 Remove from heat and stir in vanilla extract. Pour the mixture onto an oiled plate.
- 4 Allow to set, then mark into pieces using a caramel cutter. Once cold, divide with a sharp knife and wrap each caramel in wax paper.
