Creamy Turnip Soup

Ingredients

  • good strong broth
  • turnips
  • butter
  • water
  • half a pint cream

Method

  1. 1 Peel turnips and sweat them in butter and a little water until quite tender.
  2. 2 Rub the tender turnips through a tamis or sieve.
  3. 3 Mix the turnip puree with the broth and boil for about half an hour.
  4. 4 Stir in half a pint of cream and heat gently without boiling to prevent burning.
