Creamy Turnip Soup
Ingredients
- good strong broth
- turnips
- butter
- water
- half a pint cream
Method
- 1 Peel turnips and sweat them in butter and a little water until quite tender.
- 2 Rub the tender turnips through a tamis or sieve.
- 3 Mix the turnip puree with the broth and boil for about half an hour.
- 4 Stir in half a pint of cream and heat gently without boiling to prevent burning.
