Creamy Tomato Beef Soup With Rice

  • 1 can tomatoes
  • 4 cups beef stock
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 teaspoon sugar
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 tablespoons cold boiled rice
  • Croutons for serving

Method

  1. 1 Add tomatoes, beef stock, and chopped onion to a pot. Simmer together for one hour.
  2. 2 Rub the mixture through a sieve back into the pot. Reheat and season with salt, pepper, and sugar.
  3. 3 Mix butter and flour until smooth. Stir this paste into the soup and boil while stirring until thickened.
  4. 4 Stir in cold boiled rice, reheat briefly, and serve with croutons.
