Creamy Tomato Beef Soup With Rice
Ingredients
- 1 can tomatoes
- 4 cups beef stock
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 teaspoon sugar
- 1 tablespoon butter
- 1 tablespoon flour
- 3 tablespoons cold boiled rice
- Croutons for serving
Method
- 1 Add tomatoes, beef stock, and chopped onion to a pot. Simmer together for one hour.
- 2 Rub the mixture through a sieve back into the pot. Reheat and season with salt, pepper, and sugar.
- 3 Mix butter and flour until smooth. Stir this paste into the soup and boil while stirring until thickened.
- 4 Stir in cold boiled rice, reheat briefly, and serve with croutons.
