Creamy Tomato And Potato Soup

Ingredients

  • 6 medium potatoes, peeled and chopped
  • 1 stalk celery, chopped
  • 2 leeks, cleaned and sliced
  • 2 carrots, peeled and chopped
  • 1 lb fresh tomatoes, chopped (or canned, skin removed)
  • 1 bay leaf
  • Salt and pepper to taste
  • 2-3 onions, chopped
  • Butter for frying

Method

  1. 1 In a large pot, combine potatoes, celery, leeks, carrots, tomatoes, bay leaf, salt, and pepper with enough water to cover. Bring to a boil and simmer until vegetables are tender.
  2. 2 Pass the cooked vegetable mixture through a sieve or blend until smooth.
  3. 3 In a separate pan, fry the chopped onions in butter until golden.
  4. 4 Add the strained soup to the fried onions and boil for 20 minutes before serving.
