Creamy Tomato And Potato Soup
Ingredients
- 6 medium potatoes, peeled and chopped
- 1 stalk celery, chopped
- 2 leeks, cleaned and sliced
- 2 carrots, peeled and chopped
- 1 lb fresh tomatoes, chopped (or canned, skin removed)
- 1 bay leaf
- Salt and pepper to taste
- 2-3 onions, chopped
- Butter for frying
Method
- 1 In a large pot, combine potatoes, celery, leeks, carrots, tomatoes, bay leaf, salt, and pepper with enough water to cover. Bring to a boil and simmer until vegetables are tender.
- 2 Pass the cooked vegetable mixture through a sieve or blend until smooth.
- 3 In a separate pan, fry the chopped onions in butter until golden.
- 4 Add the strained soup to the fried onions and boil for 20 minutes before serving.
