Creamy Tomato And Pea Soup
Ingredients
- 1 cup peas
- 1 cup tomatoes
- 4 cups beef stock
- 2 tablespoons cornstarch
- 2 tablespoons butter
- 3 tablespoons cooked peas
- Salt and pepper to taste
Method
- 1 Cook 1 cup peas and 1 cup tomatoes together. Rub the mixture through a sieve.
- 2 Add the sieved mixture to 4 cups beef stock. Thicken with 2 tablespoons cornstarch mixed with a little cold stock.
- 3 Simmer for 15 minutes. Stir in 2 tablespoons butter and 3 tablespoons cooked peas.
- 4 Season with salt and pepper. Reheat and serve.
