Creamy Tomato And Pea Soup

Ingredients

  • 1 cup peas
  • 1 cup tomatoes
  • 4 cups beef stock
  • 2 tablespoons cornstarch
  • 2 tablespoons butter
  • 3 tablespoons cooked peas
  • Salt and pepper to taste

Method

  1. 1 Cook 1 cup peas and 1 cup tomatoes together. Rub the mixture through a sieve.
  2. 2 Add the sieved mixture to 4 cups beef stock. Thicken with 2 tablespoons cornstarch mixed with a little cold stock.
  3. 3 Simmer for 15 minutes. Stir in 2 tablespoons butter and 3 tablespoons cooked peas.
  4. 4 Season with salt and pepper. Reheat and serve.
