Creamy Tarragon Vinaigrette

Ingredients

• 8 tbsp oil
• 1/2 tsp salt
• 1 tbsp tarragon vinegar
• 1 dash Tabasco sauce

Method

1. 1 Place oil, salt, and an ice cube in a bowl.
2. 2 Work the ice into the oil with a whisk or spoon until the salt dissolves.
3. 3 Remove the ice, add vinegar and Tabasco, and beat rapidly until creamy.
4. 4 Use immediately over salads or with fish and chicken mousse.
