Creamy Tapioca Soup With Egg Yolks
Ingredients
- 1 ½ cups tapioca
- 2 quarts water
- Salt and pepper to taste
- 1 lump butter
- 2 egg yolks
- 1 pint hot milk
Method
- 1 Boil tapioca in water and season with salt and pepper.
- 2 Place butter and egg yolks in the bottom of a tureen.
- 3 Pour the boiling tapioca mixture over the butter and yolks.
- 4 Add hot milk and serve immediately.
