Creamy Tapioca Pudding

Ingredients

  • ½ cup pearl tapioca (or 3 tablespoons minute tapioca)
  • 1 quart milk
  • 1 teaspoon melted butter
  • 6 tablespoons sugar
  • 2 large eggs
  • ¼ teaspoon salt
  • 1 teaspoon vanilla or lemon extract

Method

  1. 1 Soak tapioca in cold water for one hour, then drain.
  2. 2 Add milk and butter to the drained tapioca and cook in a double boiler until the tapioca becomes transparent.
  3. 3 In a separate bowl, combine sugar and salt with beaten eggs.
  4. 4 Slowly pour the hot tapioca mixture into the eggs while stirring constantly to temper them.
  5. 5 Return the mixture to the double boiler and cook until it thickens.
  6. 6 Stir in vanilla or lemon extract and serve hot or cold with cream.
