Creamy Tapioca Pudding
Ingredients
- ½ cup pearl tapioca (or 3 tablespoons minute tapioca)
- 1 quart milk
- 1 teaspoon melted butter
- 6 tablespoons sugar
- 2 large eggs
- ¼ teaspoon salt
- 1 teaspoon vanilla or lemon extract
Method
- 1 Soak tapioca in cold water for one hour, then drain.
- 2 Add milk and butter to the drained tapioca and cook in a double boiler until the tapioca becomes transparent.
- 3 In a separate bowl, combine sugar and salt with beaten eggs.
- 4 Slowly pour the hot tapioca mixture into the eggs while stirring constantly to temper them.
- 5 Return the mixture to the double boiler and cook until it thickens.
- 6 Stir in vanilla or lemon extract and serve hot or cold with cream.
