Creamy Tapioca And Vegetable Soup
Ingredients
- 1 quart veal or chicken broth
- 1 pint cream or milk
- 1 onion
- 1 small stalk celery
- 1/3 cup tapioca
- 2 cups cold water
- 1 tablespoon butter
- 1 small piece mace
- Salt and pepper to taste
Method
- 1 Wash and soak the tapioca in the cold water overnight.
- 2 Cook the soaked tapioca in the broth for one hour.
- 3 Simmer the milk, onion, mace, and celery together for 15 minutes.
- 4 Strain the milk mixture into the tapioca broth.
- 5 Stir in the butter, salt, and pepper. Serve hot.
