Creamy Tapioca And Vegetable Soup

Ingredients

  • 1 quart veal or chicken broth
  • 1 pint cream or milk
  • 1 onion
  • 1 small stalk celery
  • 1/3 cup tapioca
  • 2 cups cold water
  • 1 tablespoon butter
  • 1 small piece mace
  • Salt and pepper to taste

Method

  1. 1 Wash and soak the tapioca in the cold water overnight.
  2. 2 Cook the soaked tapioca in the broth for one hour.
  3. 3 Simmer the milk, onion, mace, and celery together for 15 minutes.
  4. 4 Strain the milk mixture into the tapioca broth.
  5. 5 Stir in the butter, salt, and pepper. Serve hot.
