Creamy Stewed Potatoes With Shallot Sauce

Ingredients

  • 6 or 8 small potatoes
  • ½ cup water
  • 1 pint milk
  • 1 small shallot
  • 1 ounce butter
  • 1 ounce flour
  • ½ teaspoon salt
  • 6 peppercorns
  • 1 strip lemon peel

Method

  1. 1 Dissolve ½ ounce of butter in a stewpan.
  2. 2 Add peeled potatoes, sliced shallot, milk, water, salt, peppercorns, and lemon peel tied in muslin.
  3. 3 Stew until potatoes are tender.
  4. 4 Remove potatoes to a hot dish and discard the seasoning bundle.
  5. 5 Thicken the cooking liquid with remaining ½ ounce butter and flour, stirring until it boils.
  6. 6 Pour the thickened sauce over the potatoes and serve.
