Creamy Stewed Potatoes With Shallot Sauce
Ingredients
- 6 or 8 small potatoes
- ½ cup water
- 1 pint milk
- 1 small shallot
- 1 ounce butter
- 1 ounce flour
- ½ teaspoon salt
- 6 peppercorns
- 1 strip lemon peel
Method
- 1 Dissolve ½ ounce of butter in a stewpan.
- 2 Add peeled potatoes, sliced shallot, milk, water, salt, peppercorns, and lemon peel tied in muslin.
- 3 Stew until potatoes are tender.
- 4 Remove potatoes to a hot dish and discard the seasoning bundle.
- 5 Thicken the cooking liquid with remaining ½ ounce butter and flour, stirring until it boils.
- 6 Pour the thickened sauce over the potatoes and serve.
