Creamy Stewed Peas With Lettuce

  • 1 pint shelled peas
  • 2 cabbage lettuces, sliced
  • 1 small onion, sliced
  • 1 tablespoon water
  • 1 ounce butter
  • 2 egg yolks
  • 1 tablespoon cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon white sugar

Method

  1. 1 Stew peas, sliced lettuces, and sliced onion gently with butter and water for 30-45 minutes.
  2. 2 Add sugar and salt to the mixture.
  3. 3 Stir in egg yolks and cream, cooking for one minute until thickened.
  4. 4 Do not let the mixture boil to prevent the eggs from curdling.
  5. 5 Serve the stew with sippets of toasted bread.
