Creamy Stewed Peas With Lettuce
Ingredients
- 1 pint shelled peas
- 2 cabbage lettuces, sliced
- 1 small onion, sliced
- 1 tablespoon water
- 1 ounce butter
- 2 egg yolks
- 1 tablespoon cream
- 1/2 teaspoon salt
- 1/2 teaspoon white sugar
Method
- 1 Stew peas, sliced lettuces, and sliced onion gently with butter and water for 30-45 minutes.
- 2 Add sugar and salt to the mixture.
- 3 Stir in egg yolks and cream, cooking for one minute until thickened.
- 4 Do not let the mixture boil to prevent the eggs from curdling.
- 5 Serve the stew with sippets of toasted bread.
