Creamy Stewed Peas With Herbs

Ingredients

  • 2 quarts green peas
  • ¼ pound butter
  • 1 bunch parsley
  • 1 lettuce heart, cut into pieces
  • 1 bunch mint
  • 3-4 lumps sugar
  • Salt and pepper to taste
  • A very little water
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 egg yolks

Method

  1. 1 Place peas, ¼ pound butter, parsley, lettuce, mint, sugar, salt, pepper, and a little water in a stewpan.
  2. 2 Stir together and stew gently over coals for 1 to 1.5 hours.
  3. 3 Remove the parsley and mint bunches.
  4. 4 Stir in a piece of butter rolled in flour to thicken.
  5. 5 Just before serving, stir in the yolks of two eggs.
