Creamy Stewed Peas With Herbs
Ingredients
- 2 quarts green peas
- ¼ pound butter
- 1 bunch parsley
- 1 lettuce heart, cut into pieces
- 1 bunch mint
- 3-4 lumps sugar
- Salt and pepper to taste
- A very little water
- 1 tablespoon butter
- 1 tablespoon flour
- 2 egg yolks
Method
- 1 Place peas, ¼ pound butter, parsley, lettuce, mint, sugar, salt, pepper, and a little water in a stewpan.
- 2 Stir together and stew gently over coals for 1 to 1.5 hours.
- 3 Remove the parsley and mint bunches.
- 4 Stir in a piece of butter rolled in flour to thicken.
- 5 Just before serving, stir in the yolks of two eggs.
