  • 25 stewing oysters
  • 3 cups scalding milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon paprika

Method

  1. 1 Wash oysters carefully to remove shell bits. Place in a small stewing pan.
  2. 2 Heat oysters until edges begin to curl.
  3. 3 Add scalding milk, butter, salt, and paprika.
  4. 4 Bring mixture to scalding point, then remove from heat immediately and serve.
