Creamy Stewed Oysters With Egg Yolks

Ingredients

  • 3 pints oysters
  • 1 whole onion
  • Salt and pepper to taste
  • 1 piece sweet butter
  • 10-12 egg yolks
  • Vinegar
  • Minced parsley
  • Grated nutmeg
  • White wine

Method

  1. 1 Parboil oysters in their own liquor for a few minutes. Drain and rinse in warm water to remove dregs. Remove beards.
  2. 2 Place oysters in a pan with white wine, some reserved liquor, the whole onion, salt, and pepper. Stew until half done.
  3. 3 Transfer oysters and liquid to a frying pan. Fry for a short while, then add a good piece of sweet butter and continue frying.
  4. 4 Whisk egg yolks with vinegar, minced parsley, and grated nutmeg. Stir this mixture into the oysters.
  5. 5 Shake the pan gently for a warm or two to thicken the sauce, then serve immediately.
