Creamy Stewed Oysters With Egg Yolks
Ingredients
- 3 pints oysters
- 1 whole onion
- Salt and pepper to taste
- 1 piece sweet butter
- 10-12 egg yolks
- Vinegar
- Minced parsley
- Grated nutmeg
- White wine
Method
- 1 Parboil oysters in their own liquor for a few minutes. Drain and rinse in warm water to remove dregs. Remove beards.
- 2 Place oysters in a pan with white wine, some reserved liquor, the whole onion, salt, and pepper. Stew until half done.
- 3 Transfer oysters and liquid to a frying pan. Fry for a short while, then add a good piece of sweet butter and continue frying.
- 4 Whisk egg yolks with vinegar, minced parsley, and grated nutmeg. Stir this mixture into the oysters.
- 5 Shake the pan gently for a warm or two to thicken the sauce, then serve immediately.
