Creamy Stewed Oysters With Bread Sippets

Ingredients

  • 1 quart oysters
  • strained oyster liquor
  • 1 glass white wine
  • 1 anchovy, bruised
  • white pepper
  • salt
  • a little mace
  • a bunch of sweet herbs
  • ¼ pound fresh butter
  • 1 large tablespoon flour
  • bread sippets
  • cut lemon
  • grated nutmeg
  • cream

Method

  1. 1 Stew oysters, strained liquor, white wine, bruised anchovy, pepper, salt, mace, and sweet herbs gently for 1 hour to 1 hour 15 minutes.
  2. 2 Remove the bunch of herbs.
  3. 3 Knead butter with flour and stir into the stew.
  4. 4 Simmer for 10 to 12 minutes until thickened.
  5. 5 Serve garnished with bread sippets and cut lemon.
