Creamy Stewed Oysters With Bread Sippets
Ingredients
- 1 quart oysters
- strained oyster liquor
- 1 glass white wine
- 1 anchovy, bruised
- white pepper
- salt
- a little mace
- a bunch of sweet herbs
- ¼ pound fresh butter
- 1 large tablespoon flour
- bread sippets
- cut lemon
- grated nutmeg
- cream
Method
- 1 Stew oysters, strained liquor, white wine, bruised anchovy, pepper, salt, mace, and sweet herbs gently for 1 hour to 1 hour 15 minutes.
- 2 Remove the bunch of herbs.
- 3 Knead butter with flour and stir into the stew.
- 4 Simmer for 10 to 12 minutes until thickened.
- 5 Serve garnished with bread sippets and cut lemon.
