  • 1 pint lima beans
  • 1 quart boiling water
  • 1 tbsp chopped salt pork
  • 1 small onion, grated
  • 1 tbsp minced parsley
  • 1 pinch salt
  • 1 cup hot milk
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 tbsp cold milk

Method

  1. 1 Cover lima beans with boiling water and cook for 30 minutes.
  2. 2 Drain off half the water. Add salt pork, grated onion, minced parsley, and salt.
  3. 3 Stir in hot milk and stew until beans are tender.
  4. 4 Cook flour in butter, rub smooth with cold milk, and stir into beans to thicken.
