Creamy Stewed Lima Beans With Salt Pork
Ingredients
- 1 pint lima beans
- 1 quart boiling water
- 1 tbsp chopped salt pork
- 1 small onion, grated
- 1 tbsp minced parsley
- 1 pinch salt
- 1 cup hot milk
- 1 tbsp flour
- 1 tbsp butter
- 1 tbsp cold milk
Method
- 1 Cover lima beans with boiling water and cook for 30 minutes.
- 2 Drain off half the water. Add salt pork, grated onion, minced parsley, and salt.
- 3 Stir in hot milk and stew until beans are tender.
- 4 Cook flour in butter, rub smooth with cold milk, and stir into beans to thicken.
