Creamy Stewed Celery Soup

Ingredients

  • 2 or 3 heads celery
  • 2 oz butter
  • 2 tsp flour
  • 1/2 pint milk
  • pepper and salt to taste

Method

  1. 1 Remove outer hard pieces from celery, wash well, and cut into 3-inch pieces.
  2. 2 Place celery in a pot with 1/2 pint water, butter, and seasoning. Cook gently until tender, about 1 hour.
  3. 3 Add flour and milk to the pot. Simmer gently for a few minutes until thickened, then serve.
