Creamy Stewed Celery Soup
Ingredients
- 2 or 3 heads celery
- 2 oz butter
- 2 tsp flour
- 1/2 pint milk
- pepper and salt to taste
Method
- 1 Remove outer hard pieces from celery, wash well, and cut into 3-inch pieces.
- 2 Place celery in a pot with 1/2 pint water, butter, and seasoning. Cook gently until tender, about 1 hour.
- 3 Add flour and milk to the pot. Simmer gently for a few minutes until thickened, then serve.
