Creamy Split Pea Soup With Salt Pork

Ingredients

  • 1 quart split peas or Lima beans
  • 3 quarts very soft water
  • 3 onions, chopped
  • Salt and pepper to taste
  • 1 large piece butter
  • Flour
  • Slices of nice salt pork
  • 1 large teaspoon celery seed, pounded
  • Toasted bread, cut into dice
  • Butter for frying bread

Method

  1. 1 Place split peas (or Lima beans), chopped onions, salt, and pepper in a pot with 3 quarts of soft water. Boil for two hours.
  2. 2 Mash the peas well and pass them through a sieve back into the pot.
  3. 3 Thicken the liquid with a large piece of butter and flour. Add slices of salt pork and pounded celery seed. Boil until the pork is done.
  4. 4 Fry diced toasted bread in butter. Place the fried bread in the tureen, then pour the hot soup over it to serve.
