Creamy Split Pea Soup With Salt Pork
Ingredients
- 1 quart split peas or Lima beans
- 3 quarts very soft water
- 3 onions, chopped
- Salt and pepper to taste
- 1 large piece butter
- Flour
- Slices of nice salt pork
- 1 large teaspoon celery seed, pounded
- Toasted bread, cut into dice
- Butter for frying bread
Method
- 1 Place split peas (or Lima beans), chopped onions, salt, and pepper in a pot with 3 quarts of soft water. Boil for two hours.
- 2 Mash the peas well and pass them through a sieve back into the pot.
- 3 Thicken the liquid with a large piece of butter and flour. Add slices of salt pork and pounded celery seed. Boil until the pork is done.
- 4 Fry diced toasted bread in butter. Place the fried bread in the tureen, then pour the hot soup over it to serve.
