Creamy Split Pea Soup With Carrots
Ingredients
- 1½ pints split peas (green or yellow)
- 2¼ quarts water
- 2 small onions, cut fine
- 1 carrot, cut fine
- 1 parsnip, cut fine (optional)
- 1 cup milk
- ½ cup cream
- 1 teaspoon salt (adjust to taste)
- Pepper and paprika to taste
- 1½ teaspoons sugar
Method
- 1 Soak split peas overnight in water.
- 2 Add vegetables, sugar, salt, and pepper to the soaked peas.
- 3 Cook slowly for three hours until peas are tender.
- 4 Mash the mixture through a sieve.
- 5 Return to stove, add hot milk and cream, and adjust consistency with more milk if needed.
