Creamy Split Pea Soup With Carrots

Ingredients

  • 1½ pints split peas (green or yellow)
  • 2¼ quarts water
  • 2 small onions, cut fine
  • 1 carrot, cut fine
  • 1 parsnip, cut fine (optional)
  • 1 cup milk
  • ½ cup cream
  • 1 teaspoon salt (adjust to taste)
  • Pepper and paprika to taste
  • 1½ teaspoons sugar

Method

  1. 1 Soak split peas overnight in water.
  2. 2 Add vegetables, sugar, salt, and pepper to the soaked peas.
  3. 3 Cook slowly for three hours until peas are tender.
  4. 4 Mash the mixture through a sieve.
  5. 5 Return to stove, add hot milk and cream, and adjust consistency with more milk if needed.
