Creamy Spinach Soup With Lemon

Ingredients

  • 2 lbs spinach
  • 1 onion, chopped
  • 1 oz butter
  • 1 pint milk
  • Juice of 1 lemon
  • 1.5 oz fine wheat flour
  • Salt and pepper to taste

Method

  1. 1 Wash spinach thoroughly. Cook in 1 pint water with chopped onion and salt/pepper until very soft.
  2. 2 Pass the cooked spinach and onion through a sieve to create a smooth puree.
  3. 3 Melt butter in a saucepan. Stir in wheat flour to make a roux.
  4. 4 Gradually stir the spinach puree into the roux, then add the milk.
  5. 5 Bring to a boil, stirring constantly. Remove from heat and stir in lemon juice. Adjust consistency with water if needed.
