Creamy Spinach Soup With Lemon
Ingredients
- 2 lbs spinach
- 1 onion, chopped
- 1 oz butter
- 1 pint milk
- Juice of 1 lemon
- 1.5 oz fine wheat flour
- Salt and pepper to taste
Method
- 1 Wash spinach thoroughly. Cook in 1 pint water with chopped onion and salt/pepper until very soft.
- 2 Pass the cooked spinach and onion through a sieve to create a smooth puree.
- 3 Melt butter in a saucepan. Stir in wheat flour to make a roux.
- 4 Gradually stir the spinach puree into the roux, then add the milk.
- 5 Bring to a boil, stirring constantly. Remove from heat and stir in lemon juice. Adjust consistency with water if needed.
