Creamy Sorrel Potato Soup With Milk

Ingredients

  • 1 potato
  • 1 small onion
  • 1 good handful sorrel, washed and chopped fine
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1/2 pint water
  • 1/4 cup milk

Method

  1. 1 Peel, wash, and chop the potato and onion. Boil them in the water until tender, then rub the mixture through a sieve.
  2. 2 Return the purée to the saucepan. Add the milk, chopped sorrel, butter, and seasoning.
  3. 3 Simmer gently for 10 minutes and serve.
