Creamy Sorrel And Onion Soup With Croutons

Ingredients

  • 1 lb sorrel
  • 1 large Spanish onion
  • 3 pints water
  • 1 oz butter
  • Pepper and salt to taste
  • 1/2 lb Allinson wholemeal bread, cut into small dice

Method

  1. 1 Pick, wash, and chop the sorrel. Chop the onion.
  2. 2 Boil the sorrel, onion, water, butter, pepper, and salt until the onion is tender.
  3. 3 Place the bread dice in a soup tureen.
  4. 4 Pour the hot soup over the bread. Cover and let soak for a few minutes before serving.
