Creamy Sieved Onion Soup With Croutons
Ingredients
- 6 Spanish onions
- 3 oz butter
- 2 quarts water
- 3 oz flour
- 1/2 pint milk or cream
- Salt and pepper to taste
- Bread for croutons
Method
- 1 Peel and slice the onions.
- 2 Fry the onions in butter without letting them brown.
- 3 Boil the onions in water until very soft.
- 4 Rub the onions and liquid through a sieve to make a puree.
- 5 Return the puree to a pot and bring to a boil.
- 6 Stir in the flour to thicken and cook well.
- 7 Add milk or cream, salt, and pepper.
- 8 Boil briefly and serve with fried croutons.
