Creamy Sieved Celery Soup
Ingredients
- 1/2 stick celery
- 1/2 cup milk
- 2 teaspoons flour
- Pepper and salt to taste
- 1 small piece butter
Method
- 1 Cut the celery into pieces and set it in 4 pints of water over the fire.
- 2 Cook until the celery is quite tender, then rub it through a sieve.
- 3 Return the puree to the saucepan and season with pepper and salt.
- 4 Smooth the flour with part of the milk, then add the rest of the milk.
- 5 Thicken the soup with the milk mixture and boil for a few minutes before serving.
