Creamy Sieved Celery Soup

Ingredients

  • 1/2 stick celery
  • 1/2 cup milk
  • 2 teaspoons flour
  • Pepper and salt to taste
  • 1 small piece butter

Method

  1. 1 Cut the celery into pieces and set it in 4 pints of water over the fire.
  2. 2 Cook until the celery is quite tender, then rub it through a sieve.
  3. 3 Return the puree to the saucepan and season with pepper and salt.
  4. 4 Smooth the flour with part of the milk, then add the rest of the milk.
  5. 5 Thicken the soup with the milk mixture and boil for a few minutes before serving.
