Creamy Shrimp Newburg With Sherry
Ingredients
- 2 cups finely cut shrimp, scallops, lobster, or crab meat
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup milk
- 2 hard-boiled eggs
- 1 teaspoon salt
- Cayenne pepper to taste
- ¼ teaspoon paprika
- ¼ cup sherry
Method
- 1 If using canned fish, cover with cold water for 20 minutes, then drain.
- 2 Melt butter in a saucepan; add flour and stir until smooth.
- 3 Slowly add milk and boil until thickened.
- 4 Rub egg yolks through a strainer into the sauce; stir until smooth.
- 5 Add salt, cayenne, paprika, and finely chopped egg whites.
- 6 Add the cut fish pieces and heat in a double boiler for 15 minutes.
- 7 Stir in sherry and serve immediately.
