Creamy Shrimp Newburg With Sherry

Ingredients

  • 2 cups finely cut shrimp, scallops, lobster, or crab meat
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup milk
  • 2 hard-boiled eggs
  • 1 teaspoon salt
  • Cayenne pepper to taste
  • ¼ teaspoon paprika
  • ¼ cup sherry

Method

  1. 1 If using canned fish, cover with cold water for 20 minutes, then drain.
  2. 2 Melt butter in a saucepan; add flour and stir until smooth.
  3. 3 Slowly add milk and boil until thickened.
  4. 4 Rub egg yolks through a strainer into the sauce; stir until smooth.
  5. 5 Add salt, cayenne, paprika, and finely chopped egg whites.
  6. 6 Add the cut fish pieces and heat in a double boiler for 15 minutes.
  7. 7 Stir in sherry and serve immediately.
