Creamy Scalded Oyster Soup
Ingredients
- 1 gallon oysters in their own liquor
- 1 quart rich milk
- 4 egg yolks
- 2 tbsp butter
- 1 tbsp flour
- Salt and pepper to taste
- Optional: celery salt, marjoram, thyme, mace, or onion
Method
- 1 Scald oysters in their own liquor. Add milk and bring to a boil.
- 2 Skim out oysters and set aside.
- 3 Mix egg yolks with a little hot liquor, then stir rapidly into the soup.
- 4 Stir in butter and season with salt, pepper, and optional spices.
- 5 Return oysters to the soup and serve hot.
