Creamy Scalded Oyster Soup

Ingredients

  • 1 gallon oysters in their own liquor
  • 1 quart rich milk
  • 4 egg yolks
  • 2 tbsp butter
  • 1 tbsp flour
  • Salt and pepper to taste
  • Optional: celery salt, marjoram, thyme, mace, or onion

Method

  1. 1 Scald oysters in their own liquor. Add milk and bring to a boil.
  2. 2 Skim out oysters and set aside.
  3. 3 Mix egg yolks with a little hot liquor, then stir rapidly into the soup.
  4. 4 Stir in butter and season with salt, pepper, and optional spices.
  5. 5 Return oysters to the soup and serve hot.
