Creamy Salt Pork Potato Clam Chowder
Ingredients
- 1 lb lean salt pork, sliced
- 1 quart potatoes, sliced
- 2 large onions, sliced
- 1 tablespoon fat (reserved from pork)
- 1 pint water
- 1 pint rich milk
- ½ lb small round crackers
- pepper to taste
- 1 quart clams, cleaved (optional)
Method
- 1 Slice pork and fry until cooked. Drain all but 1 tablespoon of fat.
- 2 In the reserved fat, fry sliced onions until pale brown.
- 3 Layer pork, onions, potatoes, and pepper in a saucepan.
- 4 Add 1 pint water, cover, and simmer for 15 minutes.
- 5 Stir in 1 pint milk and top with crushed crackers. Cover until soft.
- 6 Serve in soup plates. Add clams 10 minutes before serving if using.
