Creamy Salt Pork Potato Clam Chowder

Ingredients

  • 1 lb lean salt pork, sliced
  • 1 quart potatoes, sliced
  • 2 large onions, sliced
  • 1 tablespoon fat (reserved from pork)
  • 1 pint water
  • 1 pint rich milk
  • ½ lb small round crackers
  • pepper to taste
  • 1 quart clams, cleaved (optional)

Method

  1. 1 Slice pork and fry until cooked. Drain all but 1 tablespoon of fat.
  2. 2 In the reserved fat, fry sliced onions until pale brown.
  3. 3 Layer pork, onions, potatoes, and pepper in a saucepan.
  4. 4 Add 1 pint water, cover, and simmer for 15 minutes.
  5. 5 Stir in 1 pint milk and top with crushed crackers. Cover until soft.
  6. 6 Serve in soup plates. Add clams 10 minutes before serving if using.
