Creamy Salt Pork Potato Chowder
Ingredients
- 6 good-sized potatoes
- ¼ lb salt pork
- 1 onion
- 1 tbsp butter
- 1 tbsp flour
- 1 pint milk or cream
- 1 pint water
- 1 tbsp chopped parsley
- 1 tsp salt
- ½ tsp pepper
Method
- 1 Dice potatoes and cut pork into small pieces.
- 2 Fry pork and sliced onion in a pan until light brown.
- 3 Layer potatoes, onion/pork mixture, salt, pepper, and parsley in a kettle.
- 4 Pour in pan grease, add water, cover, and simmer for 20 minutes.
- 5 Scald milk separately.
- 6 Make a roux with flour and butter, then stir into the scalded milk.
- 7 Add the milk mixture to the pot when potatoes are tender.
- 8 Stir carefully to avoid breaking potatoes and serve hot.
