Creamy Salsify Soup
Ingredients
- 1½ cups diced salsify
- 1½ cups water
- 1 tbsp vinegar
- 1 tbsp butter
- 1 quart milk
- salt and pepper
Method
- 1 Scrub, scrape, and clean the salsify. Dice it into small pieces.
- 2 Cook the diced salsify in salted water with 1 tablespoon of vinegar until tender. Drain well.
- 3 Add butter, milk, salt, and pepper to the drained salsify. Bring to a boil and serve with crackers.
