Creamy Salsify Soup

Ingredients

  • 1½ cups diced salsify
  • 1½ cups water
  • 1 tbsp vinegar
  • 1 tbsp butter
  • 1 quart milk
  • salt and pepper

Method

  1. 1 Scrub, scrape, and clean the salsify. Dice it into small pieces.
  2. 2 Cook the diced salsify in salted water with 1 tablespoon of vinegar until tender. Drain well.
  3. 3 Add butter, milk, salt, and pepper to the drained salsify. Bring to a boil and serve with crackers.
