Creamy Rice Pudding With Milk And Honey
Ingredients
- 1 lb Patna rice
- 2 oz butter
- 2 quarts water
- 1 small cinnamon stick or piece of lemon peel
- Salt to taste
- 3 pints skim milk
- Honey or sugar to taste
Method
- 1 In a large pot, combine rice, butter, water, cinnamon or lemon peel, and salt. Bring to a boil, then reduce heat to maintain a very gentle simmer.
- 2 Cover and cook gently for 1 hour and 15 minutes, or until the rice is completely soft and broken down.
- 3 Stir in the skim milk and cook for another 10 minutes, stirring frequently to prevent sticking.
- 4 Remove from heat. Sweeten with honey or sugar to taste. Serve warm as a breakfast porridge.
