Creamy Rice Pudding With Milk And Honey

Ingredients

  • 1 lb Patna rice
  • 2 oz butter
  • 2 quarts water
  • 1 small cinnamon stick or piece of lemon peel
  • Salt to taste
  • 3 pints skim milk
  • Honey or sugar to taste

Method

  1. 1 In a large pot, combine rice, butter, water, cinnamon or lemon peel, and salt. Bring to a boil, then reduce heat to maintain a very gentle simmer.
  2. 2 Cover and cook gently for 1 hour and 15 minutes, or until the rice is completely soft and broken down.
  3. 3 Stir in the skim milk and cook for another 10 minutes, stirring frequently to prevent sticking.
  4. 4 Remove from heat. Sweeten with honey or sugar to taste. Serve warm as a breakfast porridge.
