Creamy Red Potato Salad
Ingredients
- 1/4 cup plain fat-free yogurt
- 1/4 cup low-fat mayonnaise
- 1 tablespoon yellow mustard
- 4 medium red potatoes (about 1 pound)
- 1/2 cup chopped celery
- 1/4 cup finely chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- parsley for garnish
Method
- 1 In a small bowl, combine yogurt, mayonnaise, and mustard. Mix well and refrigerate.
- 2 Wash potatoes, place in a pot, and cover with water. Bring to a boil and simmer until fork-tender.
- 3 Drain potatoes and let cool. Cut into bite-sized cubes and place in a large bowl.
- 4 Add celery, onion, salt, and pepper to the potatoes. Top with the sauce and mix well.
- 5 Garnish with parsley and serve.
