Creamy Red Potato Salad

Ingredients

  • 1/4 cup plain fat-free yogurt
  • 1/4 cup low-fat mayonnaise
  • 1 tablespoon yellow mustard
  • 4 medium red potatoes (about 1 pound)
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • parsley for garnish

Method

  1. 1 In a small bowl, combine yogurt, mayonnaise, and mustard. Mix well and refrigerate.
  2. 2 Wash potatoes, place in a pot, and cover with water. Bring to a boil and simmer until fork-tender.
  3. 3 Drain potatoes and let cool. Cut into bite-sized cubes and place in a large bowl.
  4. 4 Add celery, onion, salt, and pepper to the potatoes. Top with the sauce and mix well.
  5. 5 Garnish with parsley and serve.
