Creamy Potato Salad With Tarragon And Capers
Ingredients
- firm potatoes, boiled and cooled
- salad oil
- heavy cream
- tarragon vinegar
- salt
- black pepper
- celery seed
- chopped capers
- pickled nasturtium seeds, minced
Method
- 1 Boil firm potatoes until cooked, then let them cool completely.
- 2 Cut the cooled potatoes into small dice.
- 3 Whisk together equal parts salad oil and cream, plus tarragon vinegar, salt, and pepper.
- 4 Stir in chopped capers or minced pickled nasturtium seeds.
- 5 Toss the potato dice in the sauce and serve immediately.
