Creamy Potato Salad With Relish
Ingredients
- 1 pound potatoes (4 medium)
- 1 cup onion, diced
- 1/2 cup celery, chopped
- 1/2 cup low-fat mayonnaise
- 1/4 cup sweet pickle relish
Method
- 1 Scrub and peel potatoes, then cut into 1-inch cubes.
- 2 Place potatoes in a saucepan, cover with water, and bring to a boil over medium heat.
- 3 Simmer for 15 minutes until tender, then drain and let cool.
- 4 In a medium bowl, combine diced onion, chopped celery, mayonnaise, and pickle relish; stir to mix.
- 5 Add cooled potatoes to the bowl and stir gently to coat evenly.
- 6 Cover the bowl and refrigerate for at least 2 hours before serving.
