Creamy Potato Onion Soup With Egg

Ingredients

  • 4 cups diced potatoes
  • 1 medium onion
  • 3 tablespoons flour
  • 1 tablespoon butter
  • 1 quart milk
  • 1 egg, beaten
  • salt and pepper
  • parsley

Method

  1. 1 Boil potatoes and onion in a small amount of water until soft.
  2. 2 Add milk, salt, and pepper, then reheat.
  3. 3 Brown flour in butter and blend slowly into the potato mixture.
  4. 4 Add a little water to the beaten egg and stir into the soup.
  5. 5 Cook for a few minutes and serve with chopped parsley.
